Garden Fresh Tomato Soup
2 Large Tomatoes
3 Large Cloves Garlic
1/2 Large Onion
1/2 Cup Basil
2 Cups Vegetable Broth or Water
1 Teaspoon Salt and 1/2 Teaspoon Pepper
1. Sauté half the onion and 3 cloves of garlic for 3 minutes
2. In a blender combine 2 large tomatoes, the sautéed onion, garlic, fresh basil, 1 cup broth & blend until smooth.
3. Poor the blended liquid and the remaining broth and into a pot and bring to a roaring boil for 35 minutes.
4. Serve hot with Garlic Bread
