Pulled Jackfruit Taquitos

2 tablespoons olive oil or water

1 medium onion, sliced

3 cloves garlic, minced

3 cups jackfruit, fresh

2 teaspoons salt

1 teaspoon pepper

1 teaspoon cumin

1 teaspoon chili powder

1 teaspoon paprika

½ teaspoon cayenne pepper

1 teaspoon Worcestershire

1 teaspoon liquid smoke

2.5 cups vegetable stock

-10 small Tortillas

-1 can pinto beans

-Tomato and Avocado to Garnish


Preheat your oven to 350ºF Oil a large knife and cut the jackfruit into disks, remove Yellow Fruit (remove seeds now). Cut each fruit into long quarters for texture!Heat the oil or water over medium heat in a large Skillet. Add the onions and garlic, and cook until translucent.Add the spices, Worcestershire, and liquid smoke. Stir to coat evenly.Add the vegetable stock and jackfruit bring to a simmer. Reduce heat, cover and simmer for 45 minutes, until the liquid is mostly absorbed and the fruit has broken down.Spread the jackfruit on a prepared baking sheet (silicon reusable baking sheet recommended) Bake for 35 minutes.Spread a few scoops of Jackfruit,beans and Roll inside the tortilla Return the rolled jackfruit Taquitos to the oven for an additional 8 minutes.

Server warm with Pico,Salsa and or Guacamole!
