Ingredients
3 flax eggs (6 Tbsp flax meal & 12 Tbsp water)
1 cup Follow Your Heart Cheddar Shreds
1 cup of flour
2 zucchini
Salt, pepper and garlic powder to taste
1.5 cups of bread crumbs of choice*
*Recommendation & Zero Waste Option - 1.5 cup bottom of the bag tortilla chips (pulverized)
Instructions
1. Mix flax meal and water and set aside for 10 minutes
2. Slice the zucchini in half and then quarter to make strips “or “wedges”
3. Mix half the cheese and half of the tortilla chip crumbs in a bowl and set aside (save the other half of tortilla chip crumbs and cheese to freshen the bowl halfway through)
4. Dip the strips into the flour then add the flax mixture into the tortilla chip cheese combo
5. Layer in the air fryer basket so that the zucchini are not touching and cook at 400 degrees for eight minutes. Work in batches!
